Jonathan Pabiot is a fourth-generation winemaker who set out on his own simply because he wanted to practice intensively organic as well as imaginative, biodynamic-inspired viticulture. For those of you who like their Sauvignon dominated by minerality, this is your wine! The smokiness (very subtle) comes from flint and not toasted oak. For this cuvee, Jonathan uses hand-harvested, organic, fruit. Gentle handling and slow processing make it utterly elegant. Look for lively lemon flavors, smoky flint and bracing acidity. Wonderful structure on the finish. Pair with oysters, clams, chevre, and smoked salmon or trout.
