The dark purple ruby-colored 2015 Chinon Les Pensees de Pallus Cabernet Franc has an intense, pure and fresh, well-concentrated bouquet of dark berries, crushed stones, spices, pencil lead and floral aromas. Medium to full-bodied, intense and juicy, with perfectly ripe dark fruit flavors, firm tannins and a delicate acidity, this is an excellent and persistent Cabernet Franc with a long and aromatic finish. The velvety textured 2015 is in great balance and reveals a fascinating tension on the finish. A beautiful wine with beef or liver.

The Cuvee de Silex from Domaines des Aubuisieres is made from fifty year--old Chenin Blanc vines in the Loire Valley. Soils for 'Cuvée Silex' are exclusively flint stone (silex in French means flint), imparting a smoky, mineral essence to the wine. Look for a bouquet of pear, green apple, quince, and melon that develops notes of mineral and honey. The wine is ever so slightly off-dry, which lends it a juicy freshness. Expressive and exceptionally well balanced on the palate with lots of lemon and a trace of anise. Great with turkey, spicy Asian dishes and salmon.

This domaine has expanded considerably since the time Serge Dagueneau took on his handful of hectares. Today, there are 23 hectares of vines, of which 18 hectares are dedicated to Sauvignon Blanc in the Pouilly-Fumé appellation. Many of the vines are ancient, with some up to one hundred years old. Most of these vines are planted on Kimmeridgian marl, one of the classic terroirs of the Pouilly-Fumé and Pouilly-sur-Loire appellations. He is the nephew of the late Didier Dagueneau, a legend in the wine world. The L'Odyssee is their flagship wine, a stunning example of Pouilly-Fume.
