The Speri Winery, whose story begins in the first half of the 1800s, has now entered its seventh generation. It makes wine from about 60 hectares of vineyards in the most select Valpolicella Classica areas. In 2015, after practicing years of sustainable farming, the winery achieved organic certification for all of its production. The Speri family, respecting its territorial heritage, has always cultivated exclusively the native grape varieties of the Valpolicella zone (Corvina, Corvinone, Rondinella, Molinara and other indigenous varieties), making wine only from grapes coming from its own vineyards and overseeing the entire production process.

Straffe Hendrik Quadrupel is the first Belgian Quadrupel ever made. It is a rich beer, intensely dark and full-bodied.
Brewed with a refined mix of special malts, the beer has a complex character, which combines a clean dryness with hints of coriander, dark fruit, anis and roasted chestnuts. The aftertaste is slightly treacly.

Parajes Del Valle Macabeo

Parajes del Valle is a relatively new winery established in 2018. Maria Jover, a 28-year-old winemaker who trained at the legendary Vega Sicilia, oversees the winemaking duties. Her modern views on winemaking are driving the transformation of other wines in the area. The certified organic Monastrell grapes all come from old vines (15-40 years) split across four plots (Fountain of the Partridges, La Cañada de Albatana and the Termino de Arriba in the north of Jumilla). They are maintained by the age-old “Terraje" system, meaning that the vineyards are rented out to the farmers, who give back 7% of the production in turn for taking good care of the vines. They are part of the García Pérez group, a major bulk wine player in Spain, but the Parajes project is a separate endeavour focusing on organic, minimal intervention wines.

Emile Pernot Absinthe Bourgeois

Founded in 1890 by Joseph and Fortunat Bourgeois, the distillery had just 2 stills and was very close to the Cousin Florentin distillery (now Guy). If it weren't for the extremely popular advertising poster that attracts the public, Bourgeois would have long been forgotten.
But this motif, on which a cat supposedly drinks absinthe from a glass, has stood the test of time. Incidentally, there was no absinthe in the glass, but milk, as evidenced by a few photographs from the time.
The absinthe from the Pontarlier region, naturally colored green with herbs, lives up to its historical name and fulfills it all the requirements that a discerning connoisseur has of a tasty absinthe.
