Quite possibly the industry's worst kept secret. There are only two distilleries on Orkney, and the one that isn't Highland Park doesn't really sell much to the indie bottles. In other words, we can almost guarantee that any 'secret' distillate coming from Orkney originates somewhere other than Scapa.

Natural colour, non-chill filtered, and bottled at 54.5% abv.

Nose: Light heathery smoke with yellow apples and sea spray.
Palate: Spices and citrus notes. Rich and malty with light peppery spices and honeyed notes.
Finish: Medium length with a coastal salinity.

Orkney, you say? Two operating distilleries produce Single Malt Scotch on the Orkney Isles, and this ain't from Scapa. That's right, this is 15 Year Old undisclosed HP Sauce! That's Highland Park for those of you that don't speak Evan. Matured in ex-Bourbon Barrels and bottled at 46%.

Probably Highland Park, but there is chance it could be Scapa. The distillery closed for refurbishments in 2005, but when did it reopen? The tasting note sounds like Highland Park, but there is no mention of smoke? The plot thickens! Distilled in 2006, matured in a Refill Hogshead and bottled at 50%.

"Introducing... Orkney Sponge! Our mash up of the Whisky Sponge and Old Orkney brands because we're into that kind of fun and nonsense! Edition OO1 is a 1998 refill hogshead of 23 year old Highland Park. It has been bottled at natural cask strength of 57.0% and has a surprisingly peaty and almost old style HP profile with plenty dry herbal and medical notes with loads of coastal freshness. Just the style we adore from this, one of our favourite distilleries. Old Orkney was, of course, the brand associated with Stromness back before the distillery sadly closed in the 1920s. It was way ahead of its time in terms of funny and witty advertising and super elegant, cool branding. It has long been an inspiration for what we've tried to do with Sponge, which is why we went out of our way to buy the brand. Orkney Sponge is our first wee experiment at having some fun with Old Orkney."
