"Orkney Sponge 2 is a single refill hogshead of 2005, 16 year old Orkney single malt whisky, bottled with a few degrees reduction at 55%. Another fresh, blustery and tasty expression of Orkney malt, wrapped up in some vintage Old Orkney tribute labelling and bottled at a strength that we felt balanced approachability with power! Please enjoy this whisky furtively inside a damp Broch. Thank you."

Nose: honeyed and funky, with cheddar and chutney; candied orange on cream cheese icing; firm malt, clean smoke, and brine.
Palate: sweet, malty, and still funky with a balance of fruit and gentle peat; thick, coating, and creamy with soft oak; lemon and lime Jujubes, more candied orange, and apricot jam; bright with a floral edge.
Finish: bright, fruity, and honeyed with soft peat, lightly salted caramel, and melted old cheddar; still with the chutney.
Comment: this is not the Viking-branded mediocrity we often see from the distillery these days or the old school sherried 18 that I adored back when it was in its prime 15-20 years ago; this is just good spirit-driven whisky from the Orkneys, wth an old school feel!
Producer Tasting Note
Nose: bright, citrussy and coastal with sweet heathery peat smoke and chalky mineral aspects. Very evocative of this modern and distillate-driven Orkney malt style.
Palate: great fatness from the distillate, balanced rich maturity with abundant distillery character. Superb freshness, power and all these lovely jangling mineral qualities.
Finish: long, honeyed, herbal, delicately peaty and salty.

Probably Highland Park, but there is chance it could be Scapa. The distillery closed for refurbishments in 2005, but when did it reopen? The tasting note sounds like Highland Park, but there is no mention of smoke? The plot thickens! Distilled in 2006, matured in a Refill Hogshead and bottled at 50%.

"Introducing... Orkney Sponge! Our mash up of the Whisky Sponge and Old Orkney brands because we're into that kind of fun and nonsense! Edition OO1 is a 1998 refill hogshead of 23 year old Highland Park. It has been bottled at natural cask strength of 57.0% and has a surprisingly peaty and almost old style HP profile with plenty dry herbal and medical notes with loads of coastal freshness. Just the style we adore from this, one of our favourite distilleries. Old Orkney was, of course, the brand associated with Stromness back before the distillery sadly closed in the 1920s. It was way ahead of its time in terms of funny and witty advertising and super elegant, cool branding. It has long been an inspiration for what we've tried to do with Sponge, which is why we went out of our way to buy the brand. Orkney Sponge is our first wee experiment at having some fun with Old Orkney."
