Chimay Rouge (Red) is noted for its coppery colour which makes it particularly attractive. Topped with a creamy head, it gives off a light, fruity apricot aroma produced by the fermentation. This top fermented Trappist beer, refermented in the bottle, is not pasteurized.

Chimay Blanche (White), with its typical golden colour, its slightly hazy appearance and its fine head is especially characterized by its aroma which results from an agreeable combination of fresh hops and yeast. A dark strong ale or Quadrupel. Dark colour, full and very impressive taste. Strong plum, raisin, and black currant palate, with ascending notes of vinousness and other complexities. There are 7 Trappist breweries in the world, 6 in in Belgium. They are Westmalle, Westvleteren, Chimay, Rochefort, Orval and Achel. No other breweries are entitled by law to apply that name to their product. Rochefort, actually known as Notre-Dame de Saint-Remy, is located neat the southern town of Rochefort and began brewing in 1595.
