This Special Finishes release from Two Brewers is composed of 22% 7 Year and 78% 8 year old whiskies finished in a First-Fill ex-Moscatel cask.
Blending Notes
"Was looking for something light to showcase Sherry flavours, especially with this being the first time we’ve used Moscatel Sherry instead of PX, without needing to turn the whisky into a sherry bomb. Blend is a little younger than most of our recent releases (and at 7/8 years that says a lot about our other releases) because more mature releases tended to overwhelm the sherry a bit. Blend is about 50% Sour Barley Mash and 50% two Standard Barley Mashes. The intent of the Sour Mash use was to accentuate the fruitiness of the Sherry with a bit of tartness and minerality. Then one of the Standard Barley Mashes was a fine distillation (plates on the still were closed and distillation was run slow) which results in a cleaner distillate with fewer congeners and fusel alcohols present. Also, because this question has come in already, the blend is 100% mashes from malted barley."
Barrelling Info
"Coincidentally, everything in this blend was in second use ISC barrels (new oak) until being transferred to a first-fill Moscatel barrel for about 2 months. Quick turn around there was mostly for practical reasons, we had been waiting on barrels to arrive and wanted to get a new special release whisky on to shelves. So this whisky was blended specifically to be in and out of barrels, we got other Sherry barrels on the same shipment that are also full now and will get a longer period to soak flavours out of the wood. "

"The fragrant bronzed dram attracts, scents of apricot and golden raisins, toasty fruit jam. The swallow start clean and gently sweet, dry malt tones opening across the palate, shrouded by mounting oak and sherry. A classic Two Brewers finish with fleeting Moscatel."
