Distilled in Paris, Kentucky by Kentucky Spirits Limited. Barrel #31 was picked by the KWM Whisky staff. Made from a mash bill of 75% Corn, 21% Rye, and 4% Malted Barley (yeah, the photo does say 10% for the Malted Barley. Shawn pointed out that it would make the mash bill to give 106%. That's impossible. No mash bill can give more than 100%. By definition that is the most any mash bill can give....), it was filled into a standard charred virgin American White Oak 53-gallon barrel on November 25th, 2018. It was aged for 3 years and 6 months before being bottled exclusively for our shop at a cask strength of 60.4%. 228 bottles total.
750ml mlEvan Tasting Note
Nose: Toffee apple, Cracker Jacks mixed with kettle corn, sawdust from cutting up two by fours, cotton candy, dried pears, and a touch of Kirsch liqueur.
Palate: Ever had a Fruit and Nut bar made with chili pepper-infused dark chocolate? Neither have I - but I am guessing it would taste like this. Big spice and chocolate notes up front lead into a creamy palate bursting with dried apples, peaches, and apricot notes. Buttered corn on the cob with a dash of chili powder and black pepper.
Finish: Creamy and spicy and warming with Juicy Fruit gum on the fade.
Comment: Enticing nose. Spicy and creamy palate. A deliciously fun Bourbon! It seems to be feast or famine when it comes to sourcing single-barrel Bourbon right now. We went an unacceptable amount of time bereft of a Bourbon bottle with our store name on it - and now we are lucky enough to have two delicious picks between this and our barrel of Woodford Double Oak!
Curt's Tasting Note
Nose: Peanut skins, candied peanuts (those pink-shelled spiky ones), and peanut brittle. Root beer and sarsaparilla, with even a bit of diner-style Cherry Coke. Charred lemon rind. Old dusty books. Reduced cranberries and mulling spices. White pepper, ginger, chili. Toasted cinnamon sticks. Chocolate fudge-y notes. Almost s'mores-esque.
Palate: Peanuts and more peanuts. Cola syrup. Burnt brisket bark with a root beer glaze. Overtoasted marshmallows. Grilled corn. Orange. Woody and spicy. A hint of very high proof and fruity eau de vie, almost hinting at brandy at the back end.
Finish: Long and warm. Spices fade to chalky chocolate-y notes and sweet and sour linger. Cinnamon and plum skins.
