85% Gamay, 10% Altesse, and 5% Mondeuse. From a small region near Rhone known as Bugey - this wine exibhits a Beaujolais sort of style while still maintaining a uniqueness that makes it stand out. Only ambient yeast is used during the wine-making process, semi-carbonic maturation is used at the start of the fermentation to boost the floral and red fruit notes while 15 days of maceration on the skins brings depth and complexity that complements and balances the bright red fruit notes with grace. The wine is then left to finish fermenting in vats on the lees for 10 months.

Jean-Pascal Sarnin and Jean-Marie Berrux, like all of us, are fans of great food and authentic, natural wine. Sitting around a table at a familiar, epicurean feast, they decided to start making some of the wines they love for themselves. Today they buy grapes and produce wines from all over Burgundy and Beaujolais, always with an eye towards sustainability and quality.
These wines are produced in a traditional and ancestral way but with the help of modern technology: the grapes are vinified by utilizing modern equipment, but continue on the path of minimal intervention by not using any oenological product (except the addition of a small dose of sulphites before bottling). A pneumatic press is employed and the wines are made without any addition of sulphur, yeasts, enzymes, etc. The same philosophy applies during the aging process, which will be done on lies until the single pumping before bottling.

Made from 100% certified organic grapes, this cool climate Gamay is a welcome taste respite from heavy full bodied red wines like Shiraz or Malbec. Look for sensations of dark Niagara cherry, raspberry, black pepper, fragrant juniper and graphite. Gamay is best served slightly chilled and works especially well with grilled chicken or salmon.
