Eli's Tasting Note

Nose: Notes of cooked apples, almonds, and vanilla. Raw cane sugar, asian pear, and cinnamon also work their way through. Like eating an apple crumble topped with vanilla ice cream and slivered almonds on a cool fall evening. 

Palate: Bone dry, medium acidity, with a fine but very present carbonation. Ripe pear, almonds, cooked apples, and cane sugar stalk upfront. Notes of rolled oats, wet river stones, and cinnamon come through on the finish. The almonds and cooked apples go on the longest. 

Comments: Awesome wine that presents itself very differently than anything I've tried before. This wine sits in the bottle under a crown cap for seven years before release, and the producer's patience is rewarded with a fantastically complex wine. Would pair wonderfully with smoked Gouda, Almond Granita, or as a digestive after a long meal. This is a fantastic wine that deserves more attention!
