Tasting Notes

Andrew's Tasting Note

Nose: light, fresh, floral, and fruity; there is a backbone of soft, toasted oak, overlaid with juicy orange, melons apricots, and Starburst Fruit Candies; chewy oatcakes, sharp young cheddar, and marshmallows.

Palate: still soft, silky really, moving towards drying but juicy oak tones; still floral and very fruity with loads of melons, dried apricot, and grilled pineapple; more citrus and waxy Starburst fruit candies; fresh and chewy oatcakes topped with Isle of Mull cheddar; subtle spice.

Finish: long, coating, and floral; the fruits and oak fade out slowly with more oatcakes, cheddar and gentle spices

Comment: this is dangerously drinkable stuff, and right in my wheelhouse; old, oxidized and fruity with a little bit of cheesy funk; I had to refill my glass... might not be "tasting" so much as drinking this one! 

Producer Tasting Note

Nose: Solid, old, waxed oak floors, velvet armchairs and a bowl of exotic fruit. Old books on newly-polished wooden shelves lead to an elegant spread of saron buns and oatcakes dusted with cinnamon and sprinkled with chopped mint.

Palate: Dried mango slices and pineapple rings are tinged with a hint of menthol. A drop of water enrichens the texture, giving beeswax richness and flavour. Sweet Madeira, toasted brioche and sunflower seeds follow.

Finish: A long and complex finish of coconut and mint, develops with soft woody tones and a little pine resin astringency.
