These Cabernet Sauvignon grapes were sourced from the Adelaida, Estrella and El Pomar sub-appellations in Paso Robles and aged 12 months in French oak (40% new oak). Ideal mild weather throughout harvest allowed each block to be picked at exactly the right time, ensuring optimal ripeness and flavour development.

A nose of blackberry, raspberry compote and plum is complemented by warm winter spices and hints of lavender. The palate shows layers of dark fruit, dark chocolate, coffee, and star anise, with plush, velvety tannins carrying the wine to a long, rich finish. Try pairing this wine with grilled steak, braised short ribs or a mushroom pizza.
