The 2nd release in Jack Ryan's "Generation Trilogy" is an 11 year old single malt, matured in ex-Bourbona and finished in Rum casks before bottling at 46%.
700 mlProducer Tasting Note
Nose: Cinnamon, ginger and a light pinch of nutmeg over a bowl of brown sugar. The sweet rum plays tag, with a spryer more resinous streak from the distillate and a slight dusty dryness from the oak. A sweet nose, but more bakery than sweet shop sweetness and with just enough spry grass interrupting the rum to keep the whole game interesting. With water, the ginger starts to fuse with the oak into something between cinnamon pastry and freshly peeled bark.
Palate: Golden brown, texture like sun… Demerara sugar, warm maple syrup, and old-fashioned rum. Leads after water into honeycomb, nutmeg and thickly honeyed graham cracker glory with a few prickly resisns from the nose’s mown grass keeping all that spiced.
Finish: Old dusty floorboards, gingersnap biscuits, and some actual ginger keeping our brown sugar spry.
