Release 16 from Yukon's Two Brewers is a "Classic" expression, bottled in June of 2019 at 43%. Only 1280 total bottles. Matured in Ex-Bourbon, the whisky is composed primarily of 4, 5 and 7 year old single malt, with a splash of 9 year old.

Blending Notes

"1/3 of the blend was a Priming batch; only 18% specialty malt, so complexity primarily from varied aging and barrel development. Some portion of mashes had short (<1yr) in new barrels, otherwise all aging was in ExBourbon. 21% 4 yr + 47% 5yr + 29% 7 yr + 3% 9 yr"

Andrew's Tasting Note

Nose: apple crumble with vanilla ice cream, and peach cobbler on the side; fresh and toasty with soft honey, floral vanilla and a touch window putty; apple cider vinegar and oak spices.

Palate: sweet, nutty and toasty with honey up front and English style ale; firm and malty, the oak has a good grip on the spirit with allspice and cedar planks; a touch of baked apple and pear, but more towards pecan rather than fruit pies; more window putty.

Finish: light, floral and fresh with gristy malt and tingling spices.

Comment: brings back memories of my College Pro franchise days, puttying old windows in the summer; maybe a crumble cooling on a nearby window sill!

Producer Tasting Note

"This dram provides a battle of the senses, prickling aromas, honeyed sweet malt, accentuated oak and spice, all a palate teasing clash. Bristling wafts shield the spirit’s malty depths. The defense is a facade, the juicy dram, mellow with spiced honey, flows smoothly onto the palate. The fringes grow a reviving warmth, oak and white pepper, that ends just as quickly, quietly reminiscing the previous moments’ sensation."
