At the age of just 20, Elisabetta Foradori (above) found herself in charge of the family winery, based in the foothills of the Dolomite Mountains in Trentino, way back in 1984. It’s been quite a journey for her, and over time she has moved in a more natural direction, looking to get the ultimate expression of the place and the main variety here, Teroldego. In pursuit of this expression, she converted to biodynamics in 2002, and was certfied in 2009. There are 28 hectares of vines here, with three-quarters of this Teroldego (they did a mass selection and so now have 15 different clones, plus grew some from seeds), plus Manzoni Bianco (a cross of Pinot Blanc and Riesling), Nosiola and Pinot Grigio, with production around 150 000 bottles a year. These vineyards are surrounded by mountains, and there are two main soil types: calcareous clay and alluvial. While many in the region grow on a high-yielding pergola system, most of her vines are vertically trellised. Since 2012, Emilio, one of her four children, has worked with her, and she has gradually taken a more natural direction. Part of this direction is a move towards using clay. Elevage is in a mix of large wood (oak and acacia), and increasingly these clay amphorae (tinajas from Spain, which are unlined). Jamie Goode

She continues to bring light to the need of respecting the environment and continues to do so with her side project, Ampeleia. Located in the coastal area of Maremma, in Tuscany, Foradori and her colleagues Giovani Podini and Thomas Widmann focus on the beauty of the terroir, whilst producing deliciously complex, yet easy drinking wines. This Unlitro (one litre) is served in a one-litre bottle, and it's easy to see why. A blend of Grenache, Alicante and Cinsault, the wine is vibrant and playful, with notes of fresh red berries, ocean breeze and a touch of minerality. Enjoy with good company!

Contra Soarda Marzemino

With a name that means “hamlet on the slope”, Vignaioli Contrà Soarda is a beacon of conscientious farming in the region of Veneto. The estate is nestled in the hills of Breganze, an area that’s been home to the Gottardi’s since 1904. For generations, this family ran a busy osteria but in 1999 they officially became vignaioli (winemakers). 12 hectares of fallow land were purchased and a winery was built directly into the rock of the hillside to minimize its environmental impact. Since the day the vines were planted, the 12-hectare vineyard has been farmed according to organic and biodynamic principles. The wineries' tenant donkeys keep cover crops in check without compacting the soil.

Produced by Marzemino grapes, this red wine has sapid notes of plum, blackberry, and violet.
