Many whisky drinkers may have cut their teeth on the ever-popular Glenfiddich 12 Year Old. Those looking to delve further into the distillery's offerings usually jump to the Glenfiddich 15 Solera or this: the 14 Year Bourbon Barrel Reserve. What sets this apart from the 15 Year Old Solera is the ex-Bourbon cask focus. The whisky spends most of its life maturing in ex-Bourbon casks before being finished charred virgin American oak barrels and then bottled at 43%.

Nose: "Deep vibrant vanilla notes with hints of citrus, caramalised brown sugar and cinnamon. Baked apple and ripe summer fruits and balanced with the rich oaky aromas."
Palate: "Beautifully rich and sweet with layers of creamy toffee, woody spices, candied orange peel and fresh toasted oak."
Finish: "Long lasting with lingering sweetness."

Bottled at 40% the Balvenie Double Wood is matured in ex-Bourbon casks before finising in Oloroso sherry casks for 9 months. The whisky is then married in tuns for 3-4 months before bottling.

"DoubleWood 12 was launched in 1993, using a process designed by our Malt Master David Stewart in 1982, now commonly known as 'wood finishing'. To make The Balvenie DoubleWood, David Stewart MBE takes whisky that has spent at least 12 years in traditional whisky casks, American Oak ex-bourbon barrels and hogsheads, and moves it to Spanish oak ex-Oloroso sherry casks for an additional nine months. The whisky is then transferred to large oak vessels called “tuns” for 3-4 months to allow the whiskies from individual casks to “marry”.'

One of the new BenRiach bottlings released under the supervision of Master Blender Rachel Barrie, the new BenRiah 12 Year old is bottled at 46% ABV with no colouring added. It is matured in a combination of three different cask styles: ex-Bourbon, ex-Sherry, and ex-Port.

"The Balvenie Caribbean Cask 14 year old single malt whisky has been matured in traditional oak whisky casks for 14 years, and then ‘finished’ in casks that previously held Caribbean rum. To create the ideal finish Malt Master David C. Stewart MBE filled American oak casks with his own blend of select West Indian rums. When he judged the casks to be ready, the rum was replaced with the 14 year old spirit and the wood was put to work adding the final touches."
