Distillerie Les Fils d'Emile Pernot makes some of the most highly regarded Absinthe in the world, and the Vieux Ponarlier is among the best of their releases. Bottled at 65%, it is made in small batches utilizing methods and traditions that date back to the 1800s. The base spirit is a distillate made with grapes from Burgundy, and locally grown wormwood is added along with anise seed, fennel, and other aromatic herbs and spices.
