The end of the 80s and the beginning of the 90s were years of profound changes for the Barolo region, and the wines started their ascent as critical darlings capable of long-term aging. The beauty of the region and the dynamic food scene led to a boom in gastro and wine tourism as well. Often this transformation has coincided with the entry of new generations into the winery The turning point for the Attilio Ghisolfi winery was 1988. Until then the company had a mixed economy, based on the production of fruit and wine grapes. With 2020 came a breath of fresh air, new ideas and new goals. Since then their wines have evolved, employing natural wine practices which means minimal intervention winemaking, low amounts of sulphur, wild yeasts and no fining or filtration. The winery itself is run on solar panels and concerns for the environment are always at the forefront.

The fermentation is carried out in a natural way with indigenous yeasts and to enhance the qualities of freshness and fragrance, the maceration takes place at a controlled temperature between 25 and 28° C for about 10 days. The wine is aged in small oak barrels for one year before being racked and bottled. There is a lovely floral component followed by notes of cherry liqueur, black licorice, tobacco and spice.
