Jack Daniels is not Bourbon, it is Tennessee Whiskey. Tennessee Whiskey, like Bourbon is made mainly from corn, but the key difference is that after distillation and before botling the spirit is mellowed through a vat of sugar maple charcoal. This filters and softens the spirit before the whisky is matured in new American oak. It also contributes to the softness and sweetness of Jack Daniels.
