Donald Ziraldo and Karl Kaiser founded Inniskillin in Niagara-on-the-Lake in 1975 and later expanded their reach to the Okanagan Valley, too. Their 1989 Inniskillin Icewine won the Grand Prix d'Honneur at Vinexpo in Bordeaux. Icewine is made by leaving grapes on the vine well into the winter months, until they are frozen to -8 C. The frozen grapes are then pressed in the extreme cold, so cold that only a few drops of sweet concentrated juice are obtained from each bunch. This Vidal is deep gold in color with an enticing nose of lychee nuts. The palate is packed with flavors of sweet tropical fruits, peaches and mango. It is intensely sweet with a clean, dry finish. Serve by itself as a dessert, or pair with creme brulee, flan or pound cake. A wonderful gift!
