This is the 2026 batch of Single Malt Whisky from Phillips Fermentorium - the fancy and delightful name for Phillips Brewing Company's distillery arm. The Fermentorium is located in Victoria, BC. The whisky itself has been matured in a combination of ex-Bourbon, ex-Red Wine, and Phillips' own ex-Beer casks for between 5 and 9 years before being married and bottled at 42% ABV.

This is the 3rd release of Yours Truly, by Eau Claire Distillery, released for International Women's Day, celebrating women in distilling. This edition of the whisky was matured in ex-Bourbon, virgin European oak, ex-Oloroso, and ex-wine casks, married and blended by the women at Eau Claire Distillery. We also love that it is bottled at 46%.
Eau Claire is Alberta's first modern craft distillery. It was founded in 2013 and resides in Diamond Valley, Alberta.

Matt & Keith sourced liquid dessert (aka PX sherry Hogshead casks) from a traditional Spanish Bodega in 2023. We utilized these beautiful casks to finish a few barrels of Wild Life single malt whisky. The resulting spirit is a wonderful expression of sherry-finished whisky: chewy dried figs, chocolate covered raisins, rounded malty notes, fruit leather and soft French oak on the finish.”

Eau Claire's 8th release of their own Single Malt Whisky was matured in a combination of ex-Bourbon and ex-Oloroso Sherry casks that were carefully selected and married together. The resulting whisky is bottled at 44.4%.
Batch 008 of Eau Claire Distillery's Single Malt Whisky has arrived, and this marks the first limited release helmed by Master Distiller Daniel Gowrie. Like Eau Claire's prior Master Distiller Caitlyn Quinn, Gowrie attended Heriot-Watt University in Scotland for their Brewing and Distilling Program.
