This is the 2026 batch of Single Malt Whisky from Phillips Fermentorium - the fancy and delightful name for Phillips Brewing Company's distillery arm. The Fermentorium is located in Victoria, BC. The whisky itself has been matured in a combination of ex-Bourbon, ex-Red Wine, and Phillips' own ex-Beer casks for between 5 and 9 years before being married and bottled at 42% ABV.

"Discover Vancouver Island's new Sanctuary Signature Single Malt Whisky. Produced from locally grown barley that is malted on site, and then matured in a combination of Bourbon, Red Wine, and Phillips Beer casks. Inspired by the coastal forests of Vancouver Island – shaped by wood and water – it honours tradition with a uniquely Canadian coastal character, capturing the rugged beauty and elemental forces of its home."

Producer Tasting Note
Nose: Rich toffee, ripe fresh fruit, and a hint of clove.
Palate: Smooth, malt-forward backbone complemented by notes of vanilla, pepper, clove, and charred oak, with a creamy, leathery mouthfeel.
Finish: Short, warming, peppery finish with a trace of coastal sea air.
