" Convergent Evolution is a 50/50 blend of Spontaneous and Mixed Fermentation beer. For the 2024 vintage, we updated the approach by blending 2- and 4-year-old wine barrels to showcase the depth and complexity of spontaneous fermentation alongside the bright, vibrant character of mixed fermentation. The result is a beer with savoury walnut and leather notes balanced by apricot, pineapple, and citrus, finishing refreshingly with a rich, coating acidity. We hope you like it!
