Producer Description:
We couldn’t complete the Whisky Sponge series without also tying up the loose end that is our side series: Equilibrium. This mini-series, designed to showcase whiskies that balance sherry and peat flavour profiles, was always intended to be a trilogy, so we are happy to finally be able to complete it. This is a 22 year old Highland Single Malt, composed of medium peated examples from 1997 and 2000, refill matured, sherry finished and then married in refill sherry to bring everything together before finally being bottled with a few degrees reduction at 53%. This is rich, layered, slightly softer on the peat and richer on the sherry, but overall a gorgeously flavoursome and luxurious example of this long lusted after flavour combination!

Nose: very richly sherried, with sweet, old school cream sherry notes, infused with pipe and cigar tobacco, rancio, dry earthy notes and a wonderfully dry, herbal and peppery background peat smoke. The peat makes the sherry more gentle and the net effect is a rich, dry, aromatically peaty and sherried old style malt that noses older than it is.
Palate: the peat starts to dominate more assertively but it is still well matched by the richness of the sherry, which comes across with more raisiny sweetness now. More dark fruits, treacle, chewing tobacco and something like smoked rancio!
Finish: very long, thick, tarry, more drying and herbaceous peat, cured meats and medicines.
