"We have been looking for some Burnside for a long time. Aswe all know, it is one of William Grant’s filling names thateveryone thinks is essentially Balvenie, but we never quiteknow for sure. What we do know, is that this cask is a full onhoney and green fruit bomb. Every inch the classical, matureDufftown Speyside style. Captured at a perfect age andperfect strength, this is a wonderful way to finally tick theBurnside box for Whisky Sponge."

Nose: superbly rich and honeyed, with bags of green and yellow fruits, soft waxes and some polished cereals that suggest natural whisky ingredients and sweetness. A hyper classical example of this region and age.
Palate: once again this is the beehive effect, a palate full of honeys, nectars, pollens and thicker beeswax impressions. Then hessians and crystalised fruits of many varieties.
Finish: long, sweet, honeyed, waxy and full of subtle notes of malt extract and beers.

"We’ve been searching for a good cask of Tomatin for a while, and this one offered a very pure and vivid take on this distillery’s inherent fruitiness. Fully matured in a relatively light touch old ex-sherry hogshead, the result is super fresh, fruity and focussed on that mature refill style. Very much our kind of dram and our preferred style of Tomatin.
"Whisky Sponge Edition No.82 is a 29 year old, 1994 Tomatin. It was matured full term in a knackered old refill sherry hogshead and we bottled the resultant fruit salad juice at natural cask strength."
