Nestarec Forks & Knives Red

Milan Nestarec’s vineyards comprise 8 hectares across two wine growing municipalities: Moravský Žižkov and Velké Bílovice. No herbicides are used and the vines are worked organically. Milan believes that gentle methods of growing grapevines and grape processing give the best result. All wines in the cellar are fermented spontaneously and they are usually vinified in acacia barrels. Made from 100% Pinot Noir that comes from 15 year old vines planted on Loess soils. The grapes are hand harvested and destemmed. The wine is fermented in 2500 litre stainless steel tanks for about 10 days with indigenous yeasts. The skins remain in contact with the juice for about 3 days, fora light and soft extraction and occasional pigeage. Half of the wine stays in tank and the other half goes into used 225 litre oak barrels for about 13 months. The wine is bottled unfiltered, unfined, and with zero sulfur added.

According to Giuseppe Vajra who is fourth generation winemaker "Claré J.C. is a Nebbiolo made according to a 1606 note from the House of Savoia jeweler Gian Battista Croce. This wine is a time-capsule into an era when Nebbiolo wines tasted fresher, lifted and slightly crisp. This is a wine for people who are young, brave at heart and curious about Piemonte forgotten past."
Produced with grapes from younger vines, Claré J.C. is a 100% Nebbiolo vinification. In 2017, approximately 25% of the fruit was vinified whole cluster.
Light ruby colour, slightly sparkling and very fresh, eye-catching. The nose opens with red fruits, vin-nouveau like aromatics, spices, gentle incense and a touch of very unique Nebbiolo stem. Mouth is vibrant, refreshing and with plenty of energy. This wine is meant to serve slightly chilled during the warmer months (14-16°C) and can pair an amazing array of diverse food, from aperitifs and appetizers to fried delicacies and BBQs.
