From the mid-1500s Il Palagio has harvested, fermented and bottled its own wines. Sting and Trudie have gone to great lengths to keep the tradition alive. Using organic farming methods, they have replanted 11 hectares of vineyards since 2000. Diageo's Distillers Edition series is sort of a 'shadow version' of their Classic Malts range. The distilleries that make up that coveted sextet are largely household names that most whisky enthusiasts have tasted, or at least heard of: Oban, Talisker, Dalwhinnie, Lagavulin, Cragganmore, and Glenkinchie. And while many folks are familiar with the flagship malts from those iconic distilleries, most haven't tackled the Distillers Edition range, where those classic single malts get treated to a bit of bonus time in finishing casks. This Dalwhinnie DE, for example, is essentially the classic 15-year-old, reracked into ex-Oloroso sherry casks for a period, and bottled each year in limited editions. Expect a richer experience than you'd find in the Classic Malts. A very welcome variation on a theme.
This is the 2021 edition, distilled in 2006, and bottled at 43%.
