"When September harvest arrives, the smell of tropical fruit bursts from our rooftop garden courtesy of an herb called pineapple sage. We infuse hundreds of its leaves and flowers into raw honey from Rosewood Estates, transforming a rustic saison into Carillon, our Biere de Miel.
Pineapple, Wildflower, and lemon blossom aromas erupt from the glass while delicate flavours of pineapple, Meyer lemon zest, and chamomile follow on the palate. The honey brings a taut acidity and a supple mouthfeel, bringing harmony as the fruit flavours echo through the aftertaste. A naturally carbonated beer born of Ontario’s local food production.
