"Sunday’s Whisky was inspired by our vision of making Japanese whisky approachable and fun, while respecting artisanal traditions and investing in impeccable quality. The result is a whisky that can be enjoyed on its own or in cocktails...particularly in an Old Fashioned, a whisky lemonade or our favourite, The Highball: “frozen” whisky, near-frozen soda and one lemon peel garnish, squeezed to release the oils for additional depth of flavour.
"We collaborated with Sasanokawa Shuzo on the exact “recipe” of Sunday’s Whisky. Barrel-aged malt and grain spirits from around the world are selected and subsequently mixed with Japanese whisky and blended with the purest Japanese water. The barrels selected for maturation are largely ex-Bourbon casks which offer a round and mellow influence to the final product. This creates a terroir that could only be crafted by combining both Sasanokawa's resources and Sunday's Spirits’ curation."
About the Producer
"After careful consideration, we selected Sasanokawa Shuzo as our partner to quench the world's thirst for Japanese whisky. Located in Koriyama, Sasanokawa has been producing alcoholic beverages for 255 years. Starting with sake, they later expanded into whisky and shochu production. Sasanokawa shares Sunday's Spirits' passion for bringing Japanese products to the world, and while our debut blend is produced for the entire world, the craftsmanship of Sasanokawa also makes Sunday's Whisky a true product of Japan.
"One of the principal aspects that makes Sunday's Whisky so special is the nature of the water we use. The water of Koriyama and the surrounding area is soft, especially for the Tohoku region, and the result is a round, full-bodied texture that dilutes evenly in a highball or cocktail and bonds to accents such as lemon twists or orange peels. After arriving as cask-strength (undiluted whisky), it is blended with this particular water to make sure the clear character of the Koriyama Springs are evident."
