Owner & winemaker, Rosalia Molina, produces these organic wines in one of Spain's highest-altitude wineries. Her mission is to make wines that express the typicity of DO Manchuela, and this includes the vineyards, the altitude and the varieties planted. The climate pushes the limits for grape growing because, at 1,100 metres above sea level issues like frost become a concern. The grapes tend to experience a large diurnal range that encourages even ripening and helps to retain natural acidity. Rosalia's vineyards are certified organic, she uses only natural fertilizers, promoting biodiversity by welcoming chickens, sheep and pigs from local farms to roam the vineyards freely. Grapes are hand-harvested and vinified as naturally as possible with native yeasts and little other intervention. The wines are then aged in clay amphora and some in French oak to give texture and complexity.
Organically produced, this 100% Malbec is a beauty, with aromas of cherry, spice and mint. Lovely vanilla flavors intermingle with new oak and licorice. Medium to full-bodied, it will go with grilled meats or Manchego, Spain's famous cheese. Vegan friendly!

Located in the Okanagan Valley, Summerhill Estates is a Certified Organic Vineyard using no herbicides, pesticides, or chemical fertilizers in the soil. For the past 14 years, the Cipes family and winemaking team have been conducting experiments with aging their wines in a large on-site pyramid. It seems to have been a great success, as tasters regularly choose the pyramid-aged wine almost unanimously as being smoother and having a better aroma than non-pyramid aged equivalents. Look for abundant tropical aromas of peaches, apricots and lychee with a crisp mouth-feel and just a touch of sweetness.
