The Cuvee de Silex from Domaines des Aubuisieres is made from mostly hand-picked five-plus decade-old Chenin Blanc vines in the Loire Valley.
Soils for 'Cuvée Silex' are exclusively flint stone (silex in French means flint), imparting a smoky, mineral essence to the wine. Look for a bouquet of pear, green apple, quince, and melon that develops notes of mineral and honey. The wine is ever so slightly off-dry, which lends it a juicy freshness. Expressive and exceptionally well balanced on the palate with lots of lemon and a trace of anise. Great with turkey or salmon.

Tingling. Delicate, chalky, pings and zings. Lime and apricot, syrup-on-stones, silk ribbons wrapped deftly around honeysuckle florals. Oranges and so much fruit that it tastes almost like an off-dry Riesling. Handles chilli heat and lime and steak very very well. (Also good with the orange and feta lentil dish.) This is an intense, gorgeous, succulent wine that is different from most Vouvrays of this intensity in that it has a lightness, a slender raciness, as if it's a lovechild of the Mosel and Vouvray. Expressive nose marrying apple, quince, a faint tropical touch and subtle mineral undertones. Fresh, juicy palate with pure flavours showing staying power. Touch of delicately crunchy citrus fruits and a delicious natural feel.
Domaine des Aubuisieres is owned by Bernard Fouquet who has 30 hectares of Chenin Blanc in some of the appellation’s very best sites.
After gaining experience in Alsace and Burgundy, Bernard Fouquet started his own winery in 1982 in the Vouvray district of the Loire Valley west of Tour. He is regarded in France and internationally as one of the top Vouvray producers. His ability to capture the mineral tones unique to Vouvray’s soil, with the marvellous balance of explosive fruit and acidity is quite remarkable. Bernard produces Vouvray in many styles from dry, demi-sec, to sweet and sparkling. All of the Aubuisieres white wines are age-worthy - particularly the sweet versions which can take years to develop and last a decade or more.
