Val d’Oca is one of the oldest, leading producers of Prosecco. Their sparkling wines are made with the Glera grape which is cultivated (by hand) and vinified in the hills of Valdobbiadene. The famous Valdobbiadene Prosecco Superiore DOCG was born here, and it is now considered the benchmark for quality in the region. Val d’Oca also produces Prosecco DOC coming from lands in the province of Treviso. Rive is a sub-zone, a quality site that is demarked to distinguish certain areas for Prosecco production. This Rive is from Colbertaldo, generally regarded as the top site for Glera grapes. This wine is ‘Extra Dry,’ which in Italian wine law means that it has a slight amount of sweetness.

The mountainous vineyards of Valdobbiadene are the main source of Italy's best Prosecco, and its designation of origin is not only controlled but also guaranteed. Lini winery was founded in 1910, by Oreste in Correggio, in the heart of Emilia. More than 100 years of history that have seen every change in the world of wine, in particular Lambrusco. The Lini winery has always distinguished itself with its range of Lambrusco and has put in years of hard work, research and oenological trials to develop the use of the Classic Method (as used in the production in Champagne) for Lambrusco. It was in 2015 Lini was nominated as one of Opera Wine's 100 Greatest Producers by Wine Spectator. It's a blend of grapes made from 85% lambrusco salamino and 15% ancellotta using the charmat method.

Oderro is one of the oldest and most respected producers in Piedmont, famous for their exceptional and long-lived Barolos. They also produce Moscato d'Asti, a sweet, fizzy low-alcohol (5%) wine that is perfect with brunch or any other occasion that calls for something fizzy and delicious. It is pale yellow in colour with a fragrant and aromatic bouquet along with light notes of mandarin, grapefruit, white peach, flowers and sage. It's refreshing, sweet and aromatic on the palate. This wine pairs well with the desserts in the best Italian tradition. We recommend it for more daring pairings and more intense flavours: certain cheeses that are not overly seasoned, salami and figs, or as an aperitif. Some venture as far as grilled prawns. In the olden days, a typical Italian snack was bread, tuma cheese (made with sheep's milk) and Moscato. Who are we to argue?
